Fresh vs Frozen Fruit: What Actually Happens to the Vitamins

Then there's what happens during transit. Fresh produce is alive — it's still respiring, still metabolising its own stored nutrients. Higher temperatures during transport accelerate that process. Enzymatic and oxidative degradation quietly chip away at vitamins like ascorbic acid (vitamin C) while the fruit sits in a lorry, a warehouse, a shop display, and finally your kitchen. None of this is dramatic or instant, but it's cumulative.

Frozen fruit, by contrast, is typically processed quickly after harvest. That rapid freezing essentially hits pause on the enzymatic breakdown, locking in whatever nutrient profile the fruit had at the time it was processed. It's a preservation method, not an enhancement — but when the alternative is days or weeks of slow degradation, pausing has real value.

So what does the research actually show?

A 2015 comparative study looked at ascorbic acid, riboflavin, alpha-tocopherol, and beta-carotene across eight fruits and vegetables, comparing frozen and fresh-stored versions. The finding: overall vitamin content of frozen produce was comparable to, and in some cases higher than, its fresh-stored counterparts. That's a moderately supported conclusion — not a single blockbuster trial, but a reasonable piece of evidence.

There's also an interesting wrinkle with blueberries specifically. Freezing forms ice crystals that disrupt plant cell walls, and there's preliminary evidence suggesting this mechanical disruption actually increases the bioavailability of anthocyanins — the antioxidants that give blueberries their deep colour — without reducing their concentration. In other words, your body may be able to access more of the good stuff from a frozen blueberry than a fresh one. I should be honest, though: this is largely mechanistic reasoning drawn from isolated reports, not from replicated human absorption studies. It's a plausible hypothesis, not a settled fact.

Similarly, storing fresh produce in a home refrigerator for five days appears to be associated with declining nutrient concentrations compared to using frozen alternatives — but again, this sits in preliminary territory.

The caveats matter

I want to be upfront about the quality of evidence here, because it matters. Much of what circulates about fresh-versus-frozen nutrition comes from agricultural blogs, dietitian news items, and industry marketing rather than independent, peer-reviewed clinical trials. Some specific numerical claims you'll see floating around — frozen blueberries retaining 46% more vitamin C than fresh, for example — lack published methodological details, which means I can't responsibly repeat them as fact.

No formal regulatory body — not the FDA, not EFSA — has taken an official position on the comparative nutritional value of fresh versus frozen produce. That's not because they think it's unimportant; it's more that the variables are enormous. Which fruit? Picked when? Stored how? For how long? Frozen by what method? The honest answer is that we have a reasonable general picture but not the granular, replicated data to make sweeping declarations.

What I'd actually do

Given all of that, here's my practical take. If you're buying fresh fruit and eating it within a day or two of purchase — ideally from somewhere with a short supply chain — you're probably doing just fine, nutritionally. Fresh, local, and eaten promptly is hard to beat.

But if your fresh fruit tends to languish in the fridge for the better part of a week, or if it's been shipped across a continent to reach your supermarket, the frozen bag may be at least comparable, and may be better for some nutrients, especially when fresh fruit has had long transit or extended refrigeration. Frozen berries in particular seem like a sensible swap if you're not going to eat fresh ones quickly.

I'm not suggesting you abandon the farmers' market. I'm suggesting that the freezer aisle deserves a bit more respect than it usually gets. And those sad strawberries in my crisper? I think I know what I'm doing differently next week.
